M. Alain DUCASSE

A word from Alain DUCASSE

In spite of how different they might be, Chinese and French cultures have a common interest in cooking. Thus you can guess dear Chinese friends, that discovering Paris inevitably means discovering its gastronomy.

You will note that it is a very varied cuisine, having been ridded of all unnecessary constraints a long time ago. You will also see that it's a young cuisine that takes its inspiration both from traditional French food as well as from various cuisines from distant shores. French cuisine is bright, joyful and inventive and produced by men and women who are truly passionate about food.

You may be surprised by the great diversity of atmospheres: eating places in Paris are sometimes faithful to the tradition of the bistros and brasseries but also to décors representing state-of-the-art architecture and international design. At the same time you will no doubt be reassured by the fact that eating well in France is much more relaxed than ever before having adopted a much more laid-back attitude.

French cuisine in general and Parisian cuisine in particular is lively and welcoming. It has not lost anything of its very ancient know-how but has opened up to the world as well. It has become even more generous, more savoury and more scintillating.
